If the email reminders pop up on your profile for her account.  Wouldn't that mean it is something with the windows profile for her login?  I think you said you rebuilt this might be the reason! How about renaming her AD account and creating a new AD and Exchange mailbox for her and seeing if it works before importing her mailbox back in.  This would also create I have run outlook /cleanreminders , reinstated expired pop up's and checked advanced pop up options, as well as done all the obvious checks but still no luck. There was a user that I support who had issues with her Outlook reminders not displaying any longer. For some reason it affects some users and not others.
